2 Tbsp. Mayonnaise
4 Medium-Size Beet Bulbs
2 Cups Filtered Water
A Pinch of Sea Salt (optional - to taste)
A pinch of freshly grounded black pepper (optional – to taste)





  • Clean and pill the beets

  • Place the four beets in a medium pot with 2 cups of filtered water and bring to boil.

  • Once the water has boiled, turn the heat down to low and simmer for about 20 minutes.

  • Remove the beets from the water and cut them into medium size cubes.

  • Place the water in a jar and save it to make beet juice. (optional)

  • Allow the beets to cool, once cooled add the mayonnaise and mix well.

  • Serve and enjoy!


Note: this dish can be served cold straight from the refrigerator.
