Ingredients:
1 Cup Strawberries
½ Cup Blueberries
½ Cup Raspberries
1 Tbsp. Organic Lemon Juice
½ Tsp. Cinnamon
1/8 Tsp. Ginger Root
1 Tsp. Vanilla Extract
1 Cup Filtered Water
1 Tbsp. Pure Cane Sugar (optional – to taste)
Directions:

Wash and drain all the berries and slice the strawberries.

Place all the berries into a medium pot and add water.

The water level should be slightly below the berries. Too much water could make the berry jam watery. To avoid adding too much water start low and add as needed.

Add the lemon juice, cinnamon, ginger root, vanilla extract to the pot and bring to a boil. Once it has boiled bring the heat down to low and allow to simmer for 20 minutes or until the jam thickens.

Depending on the season the berries sweetness will vary. If the berry jam is sweet you do not need to add sugar. If the jam is not sweet enough for your taste add the cane sugar.

Once the jam is thick, remove the pot from the eye and allow the jam to cool.

Once cooled you can place the jam in an airtight glass container and store it in the refrigerator for 2 to 3 weeks.

To construct the parfait use a bowl or a tall glass. Add organic plain yogurt to the bottom and a layer of berry jam on top. Repeat until you fill the glass or bowl, leaving enough space to add a layer of your favorite granola.
