Ingredients:
8 oz of Ground Meat (turkey, chicken, beef, lamb)
1/4 Tsp. Garlic Salt
1/2 Tsp. Basil
1/4 Tsp. Black Peppercorn Mill
3 Tbsp Olive Oil
1 Tomato
1 Onion
1 Green Bell Pepper
1 Egg
1/4 Cup Feta Cheese
1/2 Tsp. Oregano
1/3 Tsp. Garlic Salt
1 1/2 Cup of Plain Greek Yogurt
3 Green Squash (medium to large size)
2 Ripe Plantains
1 Bottle of Marinara/Tomato Sauce (I used Creamy Parmesan Flavor Marinara)
Parmesan Cheese (to taste / optional)
Directions:

In a medium size bowl mix the meat, garlic salt, black peppercorn mill, and basil, together.

Wash and cut the onion, tomato, and bell pepper and place in a blender or NutriBullet along with one egg. Blend and add to meat.

Preheat the frying pan by placing it on the eye on medium to high heat. Once the pan is hot add the olive oil & cook the meat. Allow for the juices to evaporate. Once its done set aside and allow to cool.

Thinly Slice the green squash and plantain length-long and set aside.

In a medium size bowl add the yogurt, feta cheese, garlic salt and oregano. Mix well.

Preheat the oven to 385 degrees.

Construct the lasagna in a large Pyrex. Start by drizzling some olive oil and evenly spreading it.

1st Layer - Place one layer of green squash evenly covering the bottom of the pyrex.

2nd Layer - Evenly spread some of the cooked meat.

3rd Layer - Evenly spread some of the Marinara/tomato sauce.

4th Layer - Evenly spread the yogurt/feta cheese mix.

5th Layer - Place one layer of sliced Plantains covering the pyrex.

6th Layer - Evenly spread the remainder of the cooked meat.

7th Layer - Evenly spread the remainder of the yogurt/feta cheese mix.

8th Layer - Place one layer of green squash to cover the pyrex.

8th Layer - Evenly spread the remainder of the Marinara/tomato sauce.

9th Layer - Evenly Sprinkle the Parmesan Cheese on top.

- Place the lasagna in the oven and allow to cook for 50 minutes or until the top is golden brown.

When done baking take the lasagna out of the oven and allow to cool for about 15 minutes.
