TURKEY MEATLOAF

Ingredients for Meatloaf:

 

2 lbs Ground Turkey (93% lean)
¼ Tsp. Seasoning Blend
1/8 Tsp. Ginger Root Powder
1 Tsp. Italian Seasoning
½ Tsp. Garlic Powder
1/8 Tsp. Black Pepper
Sea Salt (optional – to taste)
1 Small Red Onion
½ Red Bell Pepper
2 Garlic Cloves
1 Small Tomato
1 Scallion
1 Egg
¾ Cup Hemp Hearts
3 Tbsp Flaxseed – Whole Ground
2 Large Carrots
2 Tbsp. Olive oil

 

Ingredients for Sauce:

 

¾ Cup Ketchup
2 Tbsp. White Vinegar
3 Tbsp. Soy Sauce (gluten-free)
1 Tbsp. Pure Sugar Cane
1/8 Tsp. Cayenne
1 Cup Filtered Water

 

Directions:

 

  • Preheat oven to 475 degrees.

  • In a medium size bowl mix the meat, seasoning blend, ginger root powder, Italian seasoning, garlic powder, black pepper and sea salt. (sea salt is optional – add to taste)

  • Wash and cut the red onion, red bell pepper, garlic cloves, tomato, and scallion. Blend them together along with the egg. The vegetable blend should be somewhat thick – do not blend for too long, it should NOT be completely liquefied. Once done pour it on top of the seasoned meat and mix well.

  • Add the hemp hearts and flaxseed to the mixture and mix in well. The consistency of the mixture should be firm enough to make the shape of the loaf. If the mixture is too wet add small amounts of flaxseed until you reach the right consistency.

  • Evenly coat the bottom of large Pyrex with olive oil. Place the meat inside the pyrex and shape the loaf.

  • Make the sauce in a measuring cup. Add the ketchup, white vinegar, soy sauce, sugar cane, cayenne and filtered water and mix well. Pour sauce on top of the loaf coating the meat evenly.

  • Wash and cut the carrots into round pieces and evenly place the carrots on top and around the loaf.

  • Cover the pyrex/meatloaf with foil and place inside the oven to cook for 40 minutes.

  • Take the foil off and with a large serving spoon pour the hot sauce from the meatloaf over the loaf, coating the top of the loaf evenly. Repeat this periodically while allowing it to continue to cook for 20 minutes or until the top of meat is slightly brown.

  • Remove from the oven and let it settle for 10 minutes.

  • Serve and enjoy!
