3 oz of Ground Turkey
1/4 tsp Garlic Salt
A pinch of Black Pepper (season to taste)
1/4 tsp Coriander
1 Small Ripe Tomato
1/2 Medium Onion
½ Medium Green Bell Pepper
2 tbsp Olive Oil
1/4 cup Goat Cheese
Place the ground turkey in a small bowl and add garlic salt, coriander, and black pepper. Mix well and put it to the side.
Preheat pan over medium heat. Once the pan is hot add 2 tbsp olive oil and cook the seasoned meat.
Chop the onion and bell pepper, add to meat and cook for a few minutes.
Chop the tomato, add to meat and allow to cook for 30 seconds.
Take the pan off the heat and add the goat cheese, mix well, allow goat cheese to melt well and set to the side.
Preheat a non-stick pan and add 1 tbsp olive.
In a small bowl whisk 2 eggs together, pour into the non-stick pan and evenly coat the bottom of the pan.
When the egg looks almost fully cooked place some of the meat and vegetable mixture on top. (enough to fill half of the egg). Flip the other half of the egg on top of the mixture and serve.
